Is it possible to to set up bindings to some of the parameters of an audio route? I’ve looked but haven’t found a way. What I’m interested in is mapping CC7 values to a route volume fader. I know I can do it to rack faders.

You can, but there’s a trick to it. 
Basically you need to give the route a name before it appears in the bindings panel.
