Is there a way to assign the + and - buttons on the Cantabile transpose to a MIDI cc?
(For example, to a specific button on my controller that corresponds to a MIDI ID anch channel?)

Hi there. I get the same error when right clicking and choosing “Create Binding” on the Song Transpose buttons you highlighted (well Cantabile just crashed and didn’t check/send the logs [edit: repeated and crash log sent])… BUT you can add these manually like in the image below (I added this in a Song but the same could apply to adding these in your Background Rack so they would work in every song).
Obviously you would want to “Learn” your own MIDI Source (or just add manually if you know which CC it uses) but would suggest setting Event to "Controller (No Edge Button). Create one with Target → Object=Song, Point=Adjust Transpose, Mode= Up one semitone and duplicate this and just switch the CC (source) and Target Mode Down one semitone.
Edit Note I have both my bindings in the image set with the same CC which is an error on my part these would obviously need to be different CCs to map to your buttons on your controller. But hope this makes sense
